You stop producing lactase because your body no longer needs milk after being able to process solid food. People that have relied on it for their survival have built up an "immunity" to milk.
I was lactose intolerant (mildly) long before I went vegan. Ice cream made me sick, too much milk or anything other than 2% skim made me sick, too much cheese made me sick....and now that I've had it eliminated from my body for over two years now, it'll damned near kill me. I've seen what happened to my husband when he ate something with dairy in it and didn't know until a swallow or two. YIKES.
He was NEVER lactose intolerant.
I even convinced my DAD, the man I've known to drink more milk with every meal in my life. He was always getting sick after eating...I suggested he stop drinking milk, or at least cut his intake dramatically with his meals. He scoffed, said the milk cooled his stomach. SO I told him the down low, that milk neutralizes his stomach acid, hence the "cooling". Then I told him that by neutralizing the acid, he had nothing to digest his food properly with..it just sort of mushed in there and SAT, making him sick. NOT only that, but when you are constantly neutralizing your stomach acid, the body says "uh oh, not enough acid, make more"...so his constant heartburn when he wasn't eating was his body overproducing the acids he was neutralizing. Viscious cycle...a lot like people who become dependent on laxatives and other things that alter the body's natural chemistry...meant to be taken to temporarily get things right on track, becoming a crutch.
He actually listened to me eventually...and said "funny, I don't get as sick as often after eating...wonder why?"...then reminded him the milk thing. He glared..then said "yeah, I guess".
