I'm so sorry about your illness...and I"m very glad you found someone who knows how to treat the human body. Kind of a shame these people are usually labeled as hippies or spiritual treehugger wacks. Just like the "medical" practice, there is always room for fraud, so always tread carefully and check their resources/cridentials.
I don't have a lot of time, but if you click on my name it has my email address and I can direct you from there...PeTA has a LOT of websites and info, but if you type "veganism" and "vegan recipes" into yahoo's search engine, you'll get page after page of free recipe websites as well as info how to get all your nutrients and what to avoid (especially with allergies). Most vegan sites also include parts for wheat/peanut/grain allergic people too.
What I do is go site to site when I have time, print out the pages with the recipes on them, and put them in a binder (nicely devided by type of dish or dessert)...a homemade custom cookbook.
If you do it right, you can do veganism for little more than most already spend on food. It can be expensive, especially for the fun "luxury" itmes like totally vegan (and for once, EDIBLE even YUMMY) cheese and such.
Start your cookbook asap, and you'll be suprised the things you can make animal free.

cinnamon rolls
lasagne
tacos
portabella mushroom "steaks"
cornbread
you name it. Where there is a determined vegan there is a way.
At my wedding, I had a DISGUSTINGLY FANTASTIC and indulgent three layer chocolate and TOTALLY vegan wedding cake with possibly the BEST frosting I've EVER tasted...the guests were RAVING over it, couldn't believe how GOOD it was, asked where I got it, what type it was.
Oh the joy to see their faces when I told them it was vegan...and then explained what vegan was.
The crazy thing was, it was HUGE...for about 60-70 people and was only about $250. Luckily I live in an area with a lot of rich trendy hippies, and I remembered the upscale vegetarian "cafe flora" who was home to the best and most eclectic vegan baker in the northwest.
If you look, you will find. I was an avid cheese lover...I worshiped it. Quit cold turkey (pun intended) and haven't even looked back. DOn't miss it at all.
And yes, the hidden videos are the worst. If you ever want to make sure you go vegan and STAY vegan rent "meet your meat" by PeTA.
It's gruesome, sick, sad, and you'll never look at your plate the same way again.
