Yes, but not ALL food is like that naturally....most of the times the fat and calories are there to replace TASTE that is lost in processing.
People LOVE the fatty/salty tastes that are put into their "regular" food. Most people consume so much fat and so much salt that most food that is ordinarly quite flavorfull tastes bland and plain.
Salt and fat deaden the taste buds.
I found out years ago that mere months after altering the ingesting of my regular diet of salty fatty processed foods, that normally bland and disgusting foods acquired new and delicious tastes.
I hated brussel sprouts and asparagus for YEARS...until I cut out all the fat and salt and now I can't get enough of them just plain old steamed.
My favorite teenage meal (other than whoppers *gag*..if only I knew then what I knew now) was a turkey sandwich....smothered in butter, salt, and gravy. Couldn't taste the turkey.
Most of my meals now are quite additive free...little butter, little salt (just for a little added flavor), mushroom gravy for dryer foods. It's amazing the recovery your taste buds make when you quit OD'ing them with salts and fats.
You don't have to agree with the book, but it made me think a LOT about what people put into their bodies and how it may effect even more severely children.
